Everyone knows the cold grey months of winter are notorious for making a homebody of even the most social butterflies. Let’s face it – staying in and cozying up by the fire almost always sounds better than stacking on layers of itchy sweaters and venturing out into the cold. We all complain about feeling more lethargic in the winter, but for many the winter months only accentuate the exhaustion and lethargy experience year-round despite getting plenty of shut-eye. So what’s up with that?

Depending on who you ask you could get a dozen different explanations for your sleepy nature, but at the end of the day most people are able to perk up if they make a couple of simple lifestyle changes.

1. “I’m too tired to work out…” we’ve all said it before, and while preserving our energy may seem like the logical route for having more of it, studies prove the opposite is true. Regular exercise boosts strength, endurance, and your mood as it improves your cardiovascular system, and delivers increased oxygen and nutrients to your tissues. Adding 20 minutes of light exercise to your schedule 3 times a week may be a great way for you to tackle your sleepiness.

2. Another culprit you may want to investigate in your quest to find energy is your diet. If you’re a sucker for sweets and simple carbs your sugar highs are likely to blame for your energy lows. To reduce drowsiness, make an effort to keep blood sugar steady by enjoying a lean protein along with a whole grain at every meal. Good choices include baked or grilled chicken and brown rice, salmon and sweet potato, or salad with chicken and fruit.

3. If you aren’t getting enough iron in your diet you may experience sluggishness, irritability, weakness, and an inability to focus since less oxygen is traveling to your muscles and cells. Increase your iron intake with lean beef, kidney beans, tofu, eggs, dark green leafy vegetables, nuts, and peanut butter, and pair them with a good source of vitamin C. If you think you may have an iron deficiency you should consult a physician.

 

Recipes: Hot & Spicy Pepper Steak, Ranch Pork Chop Casserole

To help combat the chill of winter we’re bringing you a couple new recipes that will fill your home with warm, delicious aromas, and heat you up from the inside out!

It may be a little cold to man the grill these days, so take advantage of these wintry months and master your meals on the stove top!

Hot & Spicy Pepper Steak

Hot & Spicy Pepper Steak

  • 1/2 Cup picante sauce
  • 1/3 Cup water
  • 2 Tablespoons soy sauce
  • 1 Tablespoon cornstarch
  • 1/2 Teaspoon ground ginger
  • 2 Tablespoons vegetable oil
  • 1 Pound beef round steak cut into thin
  • strips
  • 1 Clove garlic, minced
  • 1 Cup fresh mushrooms, slices
  • 6 Green onions, chopped
  • 1 Medium red or green pepper; cut into short, thin strips
  • 4 Servings rice

In a small bowl combine picante sauce, water, soy sauce, cornstarch and ground ginger. Set aside.

In a large skillet or wok over high heat, heat vegetable oil. Add the meat and stir-fry 1-2 minutes. Remove with a slotted spoon and set aside.

Add garlic, mushrooms, green onions and peppers. Stir-fry for 3 minutes and return the meat to the skillet.

Cook and stir about 1 minute or until the sauce thickens. Serve over rice with additional picante sauce.

Ranch Pork Chop CasseroleRanch Pork Chop Casserole

  • 6 Pork chops
    Salt & Pepper
  • 2 Tablespoons vegetable oil
  • 2 Stalks celery, chopped
  • 4 Cloves garlic, minced
  • 1 Onion, chopped
  • 3 Cans cream of mushroom soup
  • 1 Teaspoon Spice Island Brand – Beau Monde seasoning
  • 3/4 Teaspoon dry sage seasoning
  • 1 1/3 Cup water
  • 1 1/3 Cup instant minute rice

Salt and pepper pork chops on both sides. Heat oil in a skillet and brown the chops on both sides. Remove and set aside.

Add celery, garlic and onion to skillet and cook until tender. Add soup and seasonings to the veggies and stir until heated through.

Remove 1 can measure of the mixture and reserve as gravy.

Add water and rice to skillet and combine by stirring. Pour into 9 x 12 pan and top with the pork chops.

Bake at 350* for 30 minutes and serve with warm reserved gravy.

Recipe: Egg Noodle Lasagna

Egg Noodle Lasagna

  • 1 1/2 lb. Ground beef
  • 1 Clove garlic, diced
  • 1 tsp. Sugar
  • 2 15 oz. Cans tomato sauce
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • 8 oz. Package medium egg noodles (4 cups)
  • 5 Green onions, diced
  • 8 oz. Package cream cheese
  • 1/2 cup Parmesan cheese
  • 1/2 tsp. Basil
  • 1 tsp. Oregano
  • 2 tsp. Parsley flakes
  • 1 cup Cheddar cheese
  • 1 cup Sour cream
  1. Brown the onions, meat and garlic and drain off the fat
  2. Add tomato sauce, sugar, salt, pepper and spices
  3. Cover and simmer for 15 minutes
  4. Cook noodles
  5. Blend softened cream cheese, cheddar and sour cream
  6. Lightly grease 9×13 pan
  7. Layer noodles, sauce and meat, cheese mixture (repeat)
  8. Sprinkle with parmesan cheese
  9. Bake on 350* uncovered for 30 minutes, then 400* for 10 minutes.

Recipe: Root Beer Pork Chops

This recipe for root beer pork chops is the perfect meal to whip together after a long day when your brain and fried and all you want is a delicious meal and your favorite TV show. Root beer pork chops are super easy to make and save pretty well ensuring you’ve got an equally irresistible lunch the next day.  Even better news? Root Beer Pork Chop Dinner Plated

Ingredients:

  • 4 Pork chops cut about 1 inch thick
  • 3 Bottles of root beer
  • 1 Cup beef stock
  • 2 Tablespoons brown sugar
  • 2 Teaspoons Worcestershire
  • ½ Teaspoon chipotle seasoning
  • ½ Teaspoon fresh cut rosemary
  • Salt & fresh ground black pepper to taste
  1. Combine pork chops and two bottles of root beer in a large tupperware container and marinate in the refrigerator for approximately 2 hour.
  2. Remove pork chops from the marinade, pat dry with a paper towel and season lightly with salt and freshly ground black pepper.
  3. Grill the pork chops for about 3 minutes on each side before removing from the heat and allowing them to rest.
  4. In a saucepan combine the remaining bottle of root beer, beef stock, brown sugar, chipotle seasoning and Worcestershire.
  5. Simmer and reduce the sauce by about 75% until it is the consistency of syrup and add the fresh cut rosemary.
  6. Plate the pork chops and top with a few large spoonsful of the sauce. Serve these delicious chops with grilled asparagus, and a loaded baked potato, or next to a flavorful rice and steamed veggie medley.
