You’ve gotta give our simple recipe for Spicy Thai Chicken Kebabs a try. Fire up the grill and season at your own risk… some like it hot — including us!

Spicy Thai Chicken Kebabs

Thai Spice Mix Ingredients:

  • 7-10 Thai basil leaves
  • 1 tbsp. Cracked pepper flakes
  • 1/2 tbsp. Chili/Red pepper flakes
  • 1 inch Ginger, sliced
  • 2-3 Garlic cloves
  • 2 tsp. Fish sauce
  • Salt
  • 1 tbsp. Brown sugar
  • 3 tbsp. Olive oil

Chicken Kebab Ingredients:

  • 1.5 lbs. Boneless chicken thighs cut into 1-inch pieces
  • 10 wooden Skewers soaked in water
  • Chopped Thai basil
  • Romaine lettuce to serve

Spice Mix Method:

  1. Place all ingredients in a small food processor and pulse until you have a smooth paste. Set aside.

Chicken Kebab Method:

  1. Mix the chicken and spice mix together and set aside for a least a few hours, preferably overnight. Place the wooden skewers in water to soak overnight as well.
  2. The following day, skewer the chicken dividing up evenly between the skewers.
  3. Prepare the grill to medium-high heat and brush the grill with some oil.
  4. Place the chicken skewers on the grill and cook for 5-10 minutes per side until chicken is cooked through (160˚F) and charred from the grill.
  5. Sprinkle black pepper and chopped basil on top before serving.
  6. Serve with Romaine lettuce (optional).

Recipe: Chicken Marsala

Chicken Marsala Recipe

Ingredients:

  • 4 Boneless, skinless chicken breasts (item #: 115510 )
  • All-purpose flour, for dredging
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup Extra-virgin olive oil
  • 4 oz. Prosciutto, thinly sliced
  • 8 oz. Cremini or Porcini mushrooms, stemmed and halved
  • 1/2 cup Sweet Marsala wine
  • 1/2 cup Chicken stock
  • 2 tbsp. Unsalted butter
  • 1/4 cup Chopped flat-leaf parsley

Method:

  1. Place the chicken breasts on a cutting board cover in plastic wrap and pound with a flat meat mallet until they are about 1/4-inch thick.
  2. Put some flour in a shallow platter and season with salt and pepper; mix with a fork to distribute evenly.
  3. Heat the oil over medium-high flame in a large skillet. When the oil is hot, dredge both sides of the chicken in the flour, shaking off the excess. Slip into the pan and fry for 5 minutes on each side until golden brown, turning once. Remove the chicken.
  4. Lower the heat to medium and add the prosciutto to the drippings in the pan, sauté for 1 minute. Add the mushrooms and sauté until browned, about 5 minutes; season with salt and pepper.
  5. Pour the Marsala in the pan and boil down for a few seconds to cook out the alcohol. Add chicken stock and simmer for a minute.
  6. Stir in the butter and return the chicken to the pan; simmer gently for 1 minute.
  7. Garnish with chopped parsley before serving

Recipe: Easy Chicken And Dumplings

To us, nothing screams cold-weather meal quite like Chicken and Dumplings, but who has time on a weeknight for homemade dumplings? Not us! Cut some corners on the prep work and cleanup, but get all of the irresistible flavors of this comfort food favorite with our recipe for Easy Chicken And Dumplings. We dare you to find someone who doesn’t love this one…

Ingredients:

  • 2 Large Boxes Chicken Broth
  • 1 Can Cream of Chicken Soup
  • 1.5-2 Cans Pillsbury Grands Homestyle Biscuits (or similar)
    • Pay close attention to the biscuits you purchase. You do NOT want the “Flaky Layers,” “Butter Tastin,” or “Honey Butter” versions — you want “Original” biscuits.
  • 2-3 All-Natural Chicken Breasts
  • 2-4 Stalks Celery (chopped)
  • 1/4 – 1/2 Cup Baby Carrots (chopped)
  • 1 tbsp. Coarse ground pepper

Method:

  • Chicken
    • Have A Little Extra Time: Place 2 to 3 chicken breasts in the crockpot on high for approximately 2.5 hours. Once done, shred with 2 forks and set aside to use in the soup.
    • Short On Time: Boil chicken breasts and cut into bite sized cubes or shred using 2 forks.
  • In a bowl combine cream of chicken soup and enough of the chicken broth (approx. 1/2 cup) to create a smooth, soupy texture.
  • Quarter the biscuits and with the palms of your hands roll the pieces into balls to create dumplings.
  • Combine the rest of the chicken broth, carrots, celery and pepper and heat.
  • Once at a soft boil, add the dumplings. As they heat, the dumplings will swell significantly and ultimately shrink back down.
  • Once the dumplings have shrunken down, add the cream of chicken soup mixture and stir well.
  • Add the chicken and allow the soup to continue to cook until evenly heated and enjoy!

Pasta Puttanesca

Pasta Puttanesca is a flavorsome dish requiring just a bit of chopping and throwing everything into one pan! Sauté garlic, anchovy and red pepper flakes in olive oil. Add diced tomatoes, water, and salt and bring to the boil. Reduce heat, add spaghetti, and simmer until cooked. The sauce will thicken and cling to the pasta. Mix in olives, capers, and fresh parsley — and serve! Leftovers keep in the refrigerator for five days and make a great cold lunch next day.

Roasted Chicken & Beets with Coconut Yogurt Dressing

This satisfying meal comes to together quickly with many ingredients you already have to hand. Roasted beets are the standout ingredient! They add sweetness while offering anti-inflammatory health benefits. On a baking tray, toss chicken thighs with olive oil, paprika, and cumin. Combine beets and olive oil on a separate tray — or add them to the chicken for simplicity. Roast at 425 F for about 30-35 minutes until tender. Meanwhile, cook the quinoa. Prepare the dressing by whisking coconut yogurt, lime juice, and cilantro together in a bowl. Plate up the meal and serve with lime wedges.

One-Pot Bean Chili

Not only is one-pot chili a popular meal, but using one pot means faster cleanup. Sauté onion, garlic, chili powder, cumin, and paprika. Add chopped tomatoes, water, red lentils, corn, and black beans. Black beans are rich in magnesium which supports bone health, while corn boosts the immune system. Simmer for twenty minutes so flavors meld. Serve with brown rice (cook grains in large batches to serve throughout the week). Double the recipe and you’ll have enough for two-dinners worth. Store leftovers in the fridge, or freeze for one month.
