Recipe: Easy Chicken And Dumplings

To us, nothing screams cold-weather meal quite like Chicken and Dumplings, but who has time on a weeknight for homemade dumplings? Not us! Cut some corners on the prep work and cleanup, but get all of the irresistible flavors of this comfort food favorite with our recipe for Easy Chicken And Dumplings. We dare you to find someone who doesn’t love this one…

Ingredients:

  • 2 Large Boxes Chicken Broth
  • 1 Can Cream of Chicken Soup
  • 1.5-2 Cans Pillsbury Grands Homestyle Biscuits (or similar)
    • Pay close attention to the biscuits you purchase. You do NOT want the “Flaky Layers,” “Butter Tastin,” or “Honey Butter” versions — you want “Original” biscuits.
  • 2-3 All-Natural Chicken Breasts
  • 2-4 Stalks Celery (chopped)
  • 1/4 – 1/2 Cup Baby Carrots (chopped)
  • 1 tbsp. Coarse ground pepper

Method:

  • Chicken
    • Have A Little Extra Time: Place 2 to 3 chicken breasts in the crockpot on high for approximately 2.5 hours. Once done, shred with 2 forks and set aside to use in the soup.
    • Short On Time: Boil chicken breasts and cut into bite sized cubes or shred using 2 forks.
  • In a bowl combine cream of chicken soup and enough of the chicken broth (approx. 1/2 cup) to create a smooth, soupy texture.
  • Quarter the biscuits and with the palms of your hands roll the pieces into balls to create dumplings.
  • Combine the rest of the chicken broth, carrots, celery and pepper and heat.
  • Once at a soft boil, add the dumplings. As they heat, the dumplings will swell significantly and ultimately shrink back down.
  • Once the dumplings have shrunken down, add the cream of chicken soup mixture and stir well.
  • Add the chicken and allow the soup to continue to cook until evenly heated and enjoy!

“We have been ordering food with Passanante for 3+ yrs. At first it felt a little on the expensive side but the overall value is so worth it! We never have to throw away meat that didn’t get cooked before it spoiled, or lost due to freezer burn, or even worse, spoiled meat from the grocery store. The air tight packaging is key to keeping it fresh and it defrosts so quickly. One thing to note, the cooking time is quicker with most most meats since they don’t inject extra water into the meat. That also means you are not paying for “water” but rather just the meat. Better quality meat and the ease of having is all in your freezer is worth every penny! I would highly recommend this service for busy families who value home cooked quality meals.

“We have been purchasing our meat from Passanante’s Home Food Service for about two years. Because there are just two of us at home, having each chicken breast, each hamburger patty, each steak, etc., packaged individually where we can take out only what we need is a wonderful setup for us and saves a lot of waste. I can also see how the packaging would work for a larger family – especially if not everyone is home each night for dinner, etc.

The meat has always been delivered in the window of time we have been given, and arrives frozen and ready to go into our freezer. And I love that they unpack the meat and put it in the freezer for us, moving any meat remaining from a previous order to one area of the freezer, so we know what meat to use up first.”

“We have been placing order[s] for years. Even though we have gone through several representatives to take care of our order, the customer service has always been very easy to work with. They gave us an estimate ahead of time and was always willing to work with our budget. Most importantly, the quality of what we ordered has all been great.

As a fulltime working mom, I love the convenience where I always have good quality products in my freezer. Since products are all individually packaged, we find ourselves wasting less food and eating better. I see many comments mentioned about being overpriced for frozen meats. To us, with the price we paid and the quality/freshness of these products, we have been happy with it. It also gives us an opportunity to try new things. If we don’t like it, they are happy to take it back (even it’s already open) and credited you the $$. At first, the $$ might be overwhelmed with freezer and things you have to purchase, but it pays off in the end. We thank you for Passanante.”

Preparing For Severe Weather

Hurricane Florence is expected to bring heavy rains and high winds to coastal areas in the coming days. It’s always difficult to anticipate the impact of severe and inclement weather, but we wanted to share with you some food safety tips in the event of a power outage or flooding.
If you purchased a refrigerator or freezer from Passanante’s Home Food Service and experience food loss as a result of these storms, please notify our team using the contact information provided below and we will work with you to replace those items.
Please stay safe and remember, two feet of water can sweep away most cars and as little as 6 inches of moving water and sweep you off your feet. Turn around, don’t drown.

Severe Weather Food Safety Tips

  1. Stock your home with water and non-perishable foods.
  2. Move canned goods and other foods to higher areas.
  3. If you lose power, unplug all major appliances to avoid a power surge when the power is turned back on.
  4. If possible, raise refrigerators and freezers off the floor using cement blocks.
  5. In the event of a power outage, keep refrigerator and freezer doors closed.
    • The refrigerator will keep food safe for up to 4 hours. If the power is out longer than 4 hours, consider transferring refrigerated items into a cooler with ice and/or gel packs.
  6. Frozen foods that are still safe to eat following a power outage include:
    • Frozen foods that have thawed, but still contain ice crystals
    • Foods that have remained at refrigerator temperatures – cool to the touch (40 F or below) may be safely refrozen; however quality may suffer from extended periods
    • In our commercially rated freezers, food can be preserved below 40 degrees for up to 3-4 days and longer with external ice methods. If your freezer has room, load it with water to freeze using baggies, plastic bottles, plastic jugs etc.
    • A standard full freezer will hold relatively consistent temperatures for approximately 48 hours (24 hours if only half full). If necessary, 50lbs of dry ice should hold an 18-cubic-foot freezer for 2 days. Do not touch dry ice with bare hands or place in direct contact with food.
    • Foods that don’t actually need to be frozen. These foods may be consumed unless they turn moldy or have an unusual odor (i.e. dried fruits, baked goods, hard processed cheeses, butter or margarine, fruit juices, and nuts)
  7. Discard the following food items if your refrigerator has been without power for more than 4 hours:
    • Raw, cooked, or leftover meat, poultry, fish, eggs and egg substitutes
    • Lunch meat and hot dogs
    • Casseroles, soups, stews, and pizza
    • Mixed salads including chicken, tuna, macaroni, and potato salad
    • Gravy and stuffing
    • Milk, cream. yogurt, sour cream and soft cheeses
    • Cut fresh fruits and vegetables, cooked vegetables, as well as opened fruit and vegetable juices
    • Cream-based salad dressings
    • Batter and dough (i.e. pancake batter and cookie dough)
    • Custard, chiffon or cheese pies
    • Cream-filled pastries
    • Garlic stored in oil
    • Opened mayonnaise, tartar sauce, and horseradish if they were above 50 degrees Fahrenheit for over 8 hours
    • Any food with an unusual odor, color or texture should be discarded
  8. Never taste food to determine its safety. When in doubt, throw it out.
  9. Do not eat any food that may have come into contact with flood water.
  10. Used bottled drinking water that has not come into contact with flood water.
