Recipe: Tailgate Steaks

Happy Football Season! To celebrate our favorite time of year, we’re sharing our top secret  Tailgate steak recipe. This simple recipe doesn’t require a ton of ingredients, but there is a little prep time involved — don’t worry, it’s worth it! Everyone brings chips, dips, burgers and beers to tailgates, but why not step outside the box?

What You Need:

What To Do:

1. To create the simple marinade combine the about half of the juice from the can of pickled jalapeños with the entire bottle of Italian salad dressing in a large bowl or foil tray.

2. Cut Passanante Platinum Reserve steak into 3 inch by 1 inch strips

3. Place 2 picked  jalapeños and one strip of white onion on top of the steak strip

4. Wrap the steak, jalapeños, and onion with a 1/2 piece of bacon and secure with 1 toothpick.

5. Place tailgate steak in the marinade.

6. Allow the tailgate steaks for marinade over night.

7. When it’s game time, toss the tailgate steaks onto the grill and enjoy!

Recipe: Spinach Stuffed Cajun Chicken

This next recipe courtesy of Cooking Creation just looked too good to not share with all of you. Try this spinach stuffed Cajun chicken to add a little excitement to your menu. Prep time is only about 15 minutes, then pop them in the oven and voilà.

Spinach Stuffed Cajun Chicken

What You Need:

  • 1 lb hormone-free boneless, skinless chicken breasts
  • 4 oz – 6 oz pepper jack cheese, shredded
  • 1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tbsp Italian style breadcrumbs
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Toothpicks

What To Do:

  1. Preheat oven to 350 degrees
  2. Flatten the chicken to 1/4-inch thickness
  3. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper
  4. Combine the Cajun seasoning and breadcrumbs together in a small bowl
  5. Spoon about 1/4 c of the spinach mixture onto each chicken breast
  6. Roll each chicken breast tightly and fasten the seams with several toothpicks
  7. Brush each chicken breast with the olive oil
  8. Sprinkle the Cajun seasoning mixture evenly over all
  9. Sprinkle any remaining spinach and cheese on top of chicken
  10. Place the chicken seam-side down onto a tin foil-lined baking sheet
  11. Bake for 35 to 40 minutes, or until the chicken is cooked
  12. Remove the toothpicks before serving

What You Need:

Coleslaw Preparation:

  1. Combine mayo, Asian coleslaw and apple cider vinegar in a mixing bowl.
  2. Add salt and pepper to taste.
  3. Let sit in fridge.

BBQ Bacon Shrimp Preparation:

  1. Wrap each shrimp with a piece of bacon
  2. Skewer the bacon wrapped shrimp
  3. Lightly sprinkle with Tony Chachere’s Original Creole Seasoning
  4. Bake on 350 for 10 minutes or until fully cooked
  5. Remove from oven, toss in your favorite BBQ sauce
  6. Serve BBQ bacon wrapped shrimp on top of homemade coleslaw

Sweet & Spicy Bacon Wrapped Chicken

What You Need:
4 hormone-free chicken breasts cut in thirds (12 pieces)
1 Package of thick-cut bacon (12 slices)
Salt and pepper to taste
Garlic powder
Chili powder
Brown sugar
Olive oil or non-stick spray
Preparation:
  1. Cut each breast into 3 pieces
  2. Lightly season chicken with garlic powder, chili powder, salt and pepper
  3. Wrap a piece of bacon around each piece of chicken
  4. Roll each bacon wrapped piece of chicken in brown sugar
  5. Coat an oven safe dish with olive oil or non-stick cooking spray
  6. Place bacon wrapped chicken pieces in the dish
  7. Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy.  Skip steps five and six if you prefer to grill these tasty treats!

Featured Recipe: Grilled Skirt Steak with Herb Salsa Verde

Another simple and delicious recipe from the Passanante’s Home Food Service kitchen to yours!

Grilled Skirt Steak with Herb Salsa Verde

Ingredients:

  • ½ cup olive oil
  • 4 garlic cloves chopped
  • 1 tablespoon lemon zest
  • Kosher salt and freshly ground black pepper
  • 2 cups chopped tarragon and mint
  • 1 cup chopped parsley
  • 1 skirt steak (about 1 ½ pounds) cut into two or three 10” pieces
  • Lemon wedges

Method:

  1. Mix ¼ cup oil, garlic, and lemon zest in a medium bowl; season with salt and pepper. Let marinate for 20 minutes.
  2. Add all herbs to oil mixture; stir until well coated. Let stand for 10 minutes.
  3. Stir in remaining ¼ cup oil.
  4. Season herb salsa verde to taste with salt and pepper.
  5. Season skirt steak generously with salt and pepper and grill over high heat until charred, 2 minutes per side for medium-rare. Transfer steak to a serving platter and let rest for 5 minutes.
  6. Slice steak against the grain and spoon half of the herb salsa verde over.  Serve with lemon wedges and remaining salsa verde.
