Warm Your Bones Beef Stew

Burr! It’s cold outside and the only way we know to warm up is with tasty comfort foods like this recipe for “Warm Your Bones Beef Stew.” This one has a few more ingredients than we usually post, but it’s definitely worth it. The best part? You can tweak this recipe with any amount of your other favorites like peas and corn and you’re only going to make it even better — that’s the beauty of stews! We announced earlier this year that we’ve got a wide variety of new items coming to our food delivery service, and we’re genuinely looking forward to hearing your feedback on them. What You’ll Need for “Warm Your Bones Beef Stew”:
  • 3 lbs stew meat
  • 1/3 cup flour
  • salt and pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 1/2 cup red wine (dry)
  • 2 tablespoons minced garlic
  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 2 red potatoes peeled and cubed
  • 2 tablespoons tomato paste
  • 4 1/2 cups beef broth
  • 1 teaspoon thyme

Instructions:

  1. Flour the meat by shaking in a brown paper bag filled with flour and brown it in a skillet with olive oil
  2. Transfer browned stew meat to soup pot with beef broth and boil with other ingredients.
  3. Simmer, simmer, simmer – it will cook down. Add water as needed, and always have enough water to keep it covered. (Remember this is a soup so don’t worry about adding water 🙂 )
  4. Thicken with a rue of water and flour mixed together (about 1/4 cup water and 1/4 cup flour will made it more of a liquid than a paste, which is what you want. You can also substitute the flour for cornstarch if you prefer.)
  5. Serve with warm flaky biscuits (the pillsbury ones in the can are our favorite!)

Featured Recipe: Herb Roasted Chicken

Herb Roasted Chicken

This recipe for Herb Roasted Chicken is one of our favorites because it only had a few simple ingredients and it’s ready in five easy steps. Such a great recipe to have on hand for those busy days!

Ingredients:

  • 1 Roasting Chicken, about 4 to 5 pounds
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 1 Small onion, peeled and quartered
  • 1 Rib celery, cut in large chunks
  • 1/4 Tsp dried rosemary
  • 1/2 Tsp dried leaf thyme
  • 3 Tbsp coarsely chopped fresh parsley
  • 4 Tbsp melted butter

Method:

1. Preheat oven to 350°.

2. Rub inside of chicken with lemon juice; sprinkle with salt and pepper.

3. Add the onion quarters, celery, dried herbs, and parsley to chicken cavity.

4. Place chicken in a shallow roasting pan and roast at 350° for about 20 minutes per pound.

5. Baste with melted butter several times. Internal temperature should register at least 165° on a meat thermometer inserted into the meaty part of the thigh.

Family Recipe: Lemonade Cheese Cake

Happy 2013 food lovers! We hope you all had a fantastic holiday season and new year filled with friends, family, and phenomenal food (of course).  So tell us, what is your resolution for 2013? Trying to branch our and try new foods? Eat healthier? Pass on pesticides?  Go organic? Today we thought we’d mix it up and throw out an awesome dessert recipe from a close friend’s family cookbook. This recipe for Lemonade Cheese Cake is a nice departure from the standard chocolate sheet cake, and we have nothing but good things to say about it!

What you need for the lemonade cheese cake filling:

  • 1 package of pillsbury white cake mix
  • 1 cup of sour cream
  • 6 ounce can of frozen lemonade concentrate, thawed
  • 3 ounce package cream cheese, softened
  • 1 cup sour cream
  • 3 eggs

What you need for the topping:

  • 1/4 cup sugar
  • 1 cup sour cream

How to prepare Lemonade Cheese Cake:

  1. Preheat oven to 350 degrees
  2. Using solid shortening or margarine (not oil) grease and flour a 12-cup fluted pan (non-stick finish)
  3. In a large bowl, combine all of the ingredients for the filling
  4. Blend at low speed until moist
  5. Beat at high speed for 4 minutes
  6. Bake for 50-60 minutes or until toothpick comes out clean when dipped into the filling
  7. Completely cool upright in pan for 45 minutes
  8. In a small bowl, mix sugar and four cream, spread on cake
  9. Refrigerate and serve when cold!

Recipe: Sweetie Pie

With the holidays just around the corner, we thought you might be in need of a new dessert recipe to spoil friends and family with. Sweetie Pie is simple to prepare, but impossible to forget. This recipe makes two 9-inch pans which may be one more than you need, but this recipe freezes well so you can save it until your next celebration. What you need for Sweetie Pie crust:

  • 10 graham crackers, crumbled (about 1 1/2 cups)
  • 1/2 cup butter melted

What you need for Sweetie Pie filling:

  • 1 1/2 cups butter
  • 2 1/4 cups sugar
  • 2 squares unsweetened chocolate
  • 3 teaspoons vanilla
  • 6 eggs
  • 1 pint whipped cream
  • Pecan or almonds for garnish

How to prepare Sweetie Pie:

  1. Combine crust ingredients and press into two 9-inch pans. Let set.
  2. With an electric mixer, beat butter until fluffy, add sugar, and continue to beat.
  3. Add melted chocolate and vanilla; continue to beat.
  4. Add eggs one at a time, beating 3 minutes after each.
  5. Pour over crust, chill and top with whipped cream.
  6. Sprinkle with nuts and finely shaved sweet chocolate.
  7. Chill thoroughly.
  8. And indulge.

Simple Recipe: Spicy Corn Dip

We know for many of our customers, particularly those still without power, prepping dinner or appetizers is about the last thing on your mind. We want all of our customers, neighbors, friends and family to continue to stay safe during the aftermath of Hurricane Sandy. Passanante’s Home Food Service reminds you to do your best to not open refrigerators or freezers as it will accelerate the decay of foods if you are out of power or if you are only getting power intermittently.
Up next, a simple dip recipe that you can whip up in a matter of minutes and serve with any fall meal.
What you need:
2 Cans Mexi Corn drained
Small jar pimento’s drained
Small can chopped chiles
8 or 12 oz. jar jalapeños chopped kind of big
8oz. tub sour cream
8 oz. jar mayo
1/2 teaspoon garlic salt
12 oz. mild cheddar shredded cheese
Mix all ingredients together. If time permits, this dip is best if it sits overnight in the fridge. 🙂
