It’s 12:30 on a Sunday afternoon. You’re starting to think about what sounds good for lunch and only one thing comes to mind… Chick-Fil-A chicken sandwich. You hop in the car and just as you back out of the drive way you realize, Chick-Fil-A is closed on Sunday!

We’ve all been there before. There are tons of delicious foods we all wish we had access to whenever we want. Luckily Passanante’s Home Food Service has you covered with our new “Life Hack Recipes” series available here on our blog once a month! We hope you enjoy our first installment featuring Chick-Fil-A sandwiches and Texas Roadhouse Honey Butter!

Chick-Fil-A Sandwich

Total prep time: 1 hour and 10 minutes

Chick-Fil-A chicken sandwich

What you need to make your very own Chick-Fil-A chicken sandwich:

  • 2 thin chicken breasts
  • 1/4 cup pickle juice
  • 1 egg
  • 1/8 cup milk
  • 1/2 cup flour
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon basil
  • 1/4 cup peanut oil
  • 2 buns
  • Salt and pepper

How to prepare homemade Chick-Fil-A goodness (makes 2 sandwiches):

  1. Put the chicken breasts in a plastic bag of pickle juice and let it marinate for an hour
  2. Beat together an egg and milk
  3. In a separate containers mix together the flour, sugar, garlic powder, celery salt, basil, salt and pepper
  4. Heat the oil in a skillet on medium-high heat
  5. Coat each chicken piece in the egg mixture. Coat again with the flour mixture
  6. Fry each piece for 3-4 minutes per side until the chicken is that delicious familiar golden-brown color
  7. Pat the oil off the chicken using paper towels
  8. Butter the sandwich buns and give them a spin in the still hot skillet to toast the edges
  9. Add a couple pickles and your favorite condiments
  10. Most delicious when enjoyed on a Sunday!

Whip together the following ingredients and enjoy spread over warm rolls, waffles, pancakes, french toast, or melt over hot rice cereal or oatmeal. YUM!

  • 1 cup (2 sticks) butter, very softened
  • 1 cup powdered sugar
  • 1 cup honey
  • 2 teaspoons cinnamon

Brunch Recipe: Cheese and Herb Soufflés with Mushrooms

Valentine's Day Soufflés

Haven’t nailed down your Valentine’s Day plans just yet? Show your sweetheart how much you care with a homemade brunch to remember. This gourmet recipe for cheese and herb soufflés with sautéed mushrooms will make you look like a seasoned chef and is sure to warm your darling’s heart. As with any recipe, this one is best when prepared with super fresh organic eggs and chemical free produce available for delivery if you’re a Passanante’s Home Food Service customer. Feel free to make these in advance as they will keep for up to 24 hours in the refrigerator without the topping.

What you need for 6 soufflés:

  • 2 Ounces of butter
  • 1/3 Cup all-purpose flour
  • 2/3 Cup milk
  • 1 Heaping cup of ricotta cheese
  • 1 Cup light cream
  • 1-2 Cups sautéed white mushrooms
  • 4 Egg yolks
  • 6 Egg whites
  • 2 Tablespoons finely chopped fresh parsley
  • 2 Tablespoons finely chopped fresh thyme
  • 1 Tablespoon finely chopped fresh rosemary
  • 2 Tablespoons grated Parmesan cheese
  • Salt and pepper to taste

How to make Cheese & Herb Soufflés with Mushrooms:

  1.  Preheat oven to 350* F
  2. Coat six 3.5inch souffle dishes with melted butter
  3. Melt 2 ounces of butter in a medium sauce pan, add flour and cook for 30 seconds, stirring constantly
  4. Whisk in the milk and continue whisking over low heat until thick
  5. Cook for about 30 seconds more and remove from heat and beat in ricotta cheese
  6. Add egg yolks and herbs and season well with salt pepper
  7. Beat egg whites until they form stiff peaks and gently fold them through the ricotta mixture
  8. Spoon into the soufflé dishes, filling them to the top (do not over fill)
  9. Place in a baking dish and pour in enough boiling water to come about half way up the soufflé dishes
  10. Bake 15-20 minutes or until soufflés have risen and browned
  11. Remove from oven and let cool for 10 minutes before gently removing from their molds
  12. Place souffles in a lightly greased dish and increase oven temp to 400*F
  13. Pour cream evenly over the tops, sprinkle with Parmesan and bake for an additional 15 minutes
  14. Garnish with sautéed mushrooms and serve right away.

Recipe: Filet of Beef with Red Wine Sauce

This next recipe is a classic that every cook needs to have in their back pocket for a quaint dinner party at home. Served with crisp steamed asparagus, filet of beef with red wine sauce makes for a beautiful presentation and an irresistible meal. As with any recipe, this one tastes best when prepared with quality, hormone-free, platinum reserve beef.

Beef Filet

What you’ll need:

  • 4 Filets of beef, about 6 ounces and 1 1/2 inches thick
  • 1 Tablespoon vegetable oil
  • 3 Cups sliced mushrooms
  • 3 Tablespoons butter, divided
  • 3 Tablespoons shallots, finely chopped
  • 3/4 Cup red wine
  • 1/2 Cup beef broth
  • 1 Teaspoon tomato paste
  • Parsley
  • 1 Package noodles
  • Salt to taste
  • Pepper to taste

How to make Filet of Beef with Red Wine Sauce:

  1. Cook noodles according to package directions
  2. Sprinkle both sides of beef filets with salt and pepper
  3. In a skillet large enough to hold all of the filets flat, heat the vegetable oil
  4. Add the filets and cook about 2 minutes over relatively high heat until browned and slightly crisp
  5. Turn the filets over and continue cooking on low heat for about 3 minutes for rare meat, or 5 minutes for well done
  6. Transfer the meat to a warm platter
  7. Pour off the fat from the skillet
  8. Add 1 tablespoon butter and mushrooms and stir for about 2 minutes
  9. Add the shallots and continue cooking briefly
  10. Add red wine, beef broth, and tomato paste
  11. Add any liquid accumulated around the meat
  12. Cook while stirring over relatively high heat for 5-7 minutes or until the liquid is thick and reduced to 1 1/2 cups
  13. Swirl in 2 tablespoons of butter
  14. Serve this mixture over hot meat with noodles.
  15. Sprinkle with parsley and enjoy!

Even savory people with little appetite for sweets cannot resist eating a bakers dozen by themselves. These cookies have a light, fresh and crispness to them that is simply irresistible — plus they freeze incredibly well so make more than you think you’ll need.

World's Best Cookies Recipe

  • 1 cup butter (softened)
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup salad oil
  • 1 cup oats
  • 1 cup crushed corn flakes
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans
  • 3 1/2 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

How to bake the World’s Best Cookies: 

  1. Preheat oven to 350 degrees
  2. Cream together butter and sugars until light and fluffy
  3. Add egg, mix well
  4. Add vanilla and salad oil, mix well
  5. Add oats, cornflakes, coconut and nuts, stir well
  6. Then add flour, baking soda and salt, mix well
  7. Form into small balls and place on ungreased cookie sheet. Flatten with fork dipped in water
  8. Bake 12 minutes and allow to cool.

With Christmas only days away we thought it was only appropriate to start bringing out the recipes people really care about … desserts! No holiday gathering is complete without a fully stocked sweets selection to tempt everyone’s taste buds from chocolate lovers to gingerbread men. These next recipes are the perfect addition to any menu and go great with that nightcap cup of decaf!

We hope all of our customers, friends and family have an incredible Christmas next week. We hope your freezers are fully packed with a delicious assortment of meals you can whip up for the family during a movie night at home, or when the neighbors drop in to catch up. Enjoy!

Chocolate-Praline Jumbo Holiday Mud Squares:

  • 3/4 cup graham cracker crumbs
  • 3/4 cup pecans, finely chopped
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup butter or margarine, melted
  • 3 tablespoons all-purpose flour
  • 1 (12 ounce) jar carmel-flavored topping
  • 1 cup butter (sinful, we know!)
  • 4 (1 ounce) squares unsweetened chocolate
  • 1 1/2 cups sugar
  • 1 cup flour
  • 4 eggs
  • 1 teaspoon vanilla extract
  1. Combine graham cracker crumbs, pecans, brown sugar, and melted butter in a large bowl stirring well
  2. Press crumb mixture into the bottom of a 9-inch square pan
  3. Bake at 350 for 6 to 8 minutes then cool slightly
  4. Combine 3 tablespoons flour with caramel topping and spread with 1/4 inch from edge of the pan. Set aside
  5. Combine 1 cup butter and chocolate in a heavy saucepan; cook over low heat until melted.
  6. Stir in sugar, 1 cup flour, eggs and vanilla
  7. Pour mixture over caramel topping in the pan
  8. Bake at 350 degrees for 50 minutes.
  9. Cool slightly and spread with chocolate frosting (see below)

Homemade Chocolate Frosting:

  • 1 tablespoon butter
  • 2 tablespoons cocoa
  • 2 tablespoons water
  • 1 cup sifted powdered sugar
  • 1/4 teaspoon vanilla
  1. Combine butter, cocoa, and water in a small saucepan and cook over medium heat until thickened.
  2. Remove from heat; stir in powdered sugar and vanilla.

Gingerbread Cookies:

  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 2 tablespoons molasses
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  1. Cream butter and sugar together, add the egg and mix well
  2. Mix in the molasses
  3. In a separate bowl combine flour, baking soda, cinnamon, ginger, cloves, and salt
  4. Gradually add these dry ingredients to the wet ingredients
  5. Mix until well-combined
  6. Chill dough for at least 2 hours (overnight is preferred)
  7. Preheat oven to 375 degrees and grease the cookie sheets
  8. On a lightly floured surface, or between 2 sheets of wax paper, roll out the dough to 1/4 inch thick for chewy cookies or 1/8 inch thick for crispy cookies
  9. Cut desired shapes using cookie cutters
  10. Place cookies 1 inch apart on prepared cookie sheets. Bake 10 to 12 minutes until cookies are firm and lightly toasted on the edges.
