What’s With The Bacon Craze?

If you spend anytime on Pinterest, Facebook, Twitter, or pretty much any other website you’ve probably picked up on the recent bacon craze. Suddenly bacon is more than a favorite breakfast food or burger topping; bacon is a way of life. There’s a bacon Facebook fan page, bacon inspired nail polish, lampshades, adhesive bandages, cell phone cases, and even bacon scented candles (check out our “Bacon Craze” Pinterest board to see a few of these bizarre adaptations).

So what’s with the bacon craze? Why this sudden outpouring of bacon love? Well, a few weeks ago the National Pig Association in Britain announced an inevitable world bacon and pork product shortage in 2013 as a result of the increased prices for feed following severe drought. In fact, pork supply in US warehouses was at a record high last month, rising 31% to 580.8 million pounds as farmers scaled down their herds in an effort to save on feed costs.

Luckily, according to Steve Meyer, consultant to the National Pork Producers Council and National Pork Board, there’s no risk of a shortage saying, “If the definition of shortage is that you can’t find it on the shelves, then no, the concern is not valid. If the concern is higher cost for it, then yes.”

Zesty Romaine Crunch Salad

Zesty Romaine Crunch Salad

It’s been awhile since Passanante’s posted our Italian Summer Salad, so we figured it was time to post this fabulous recipe for Zesty Romaine Crunch Salad.  This recipe is great when served with Heavenly Tilapia and a simple pasta — definitely worth wipping up this weekend. The Crunchy Topping:

  • 1/2 cup chopped pecans
  • 1/2 package Ramen noodles uncooked and broken up
  • 1 Tbs. oil

Heat oil, cook nuts and noodles until crispy and light brown. Drain on paper towel.

The Salad:

  • 1 head of organic romaine lettuce torn into bite sized pieces
  • 1/2 bunch of organic broccoli crowns, chopped very fine
  • 1 bunch of organic green onions, chopped

Mix all in plastic container and place in refrigerator.

The Dressing:

  • 1/2 cup sugar heated with
  • 1/2 cup of red wine vinegar. Remove from stove and add…
  • 1/2 cup olive oil
  • 2 tbs. soy sauce

Chill dressing. Mix crunchy topping, salad and dressing just before serving.

Enjoy!

Recipe: Heavenly Tilapia

This crazy quick recipe for Heavenly Tilapia, aka Tilapia Parmesan, is sure to become one  of your go-to dinner options when you’re in a rush. Pop these filets in the broiler while you mix up a crunchy salad and simple pasta — this meal is ready in 15! What You Need to Make Heavenly Tilapia:

  • 2lbs skinned tilapia filets
  • 2 tbs. lemon juice
  • 1/2 cup grated parmesan cheese
  • 1/4 cup softened margarine
  • dash of hot pepper sauce (tabasco)
  • 3 tbs. mayonnaise
  • 3 tbs. chopped green onions (can use more)
  • 1/4 tsp. salt

How To Make It:

  1. Place filets in a single layer on a well greased baking platter (Pyrex works great)
  2. Brush fish with the lemon juice
  3. Combine the rest of the ingredients in a bowl
  4. Broil filets about 4 inches from heat source for 4-6 minutes or until they flake easily when tested with a fork
  5. Remove from oven and spread with cheese mixture
  6. Broil 2-3 minutes or until golden brown.

Recipe: Tailgate Steaks

Happy Football Season! To celebrate our favorite time of year, we’re sharing our top secret  Tailgate steak recipe. This simple recipe doesn’t require a ton of ingredients, but there is a little prep time involved — don’t worry, it’s worth it! Everyone brings chips, dips, burgers and beers to tailgates, but why not step outside the box?

What You Need:

What To Do:

1. To create the simple marinade combine the about half of the juice from the can of pickled jalapeños with the entire bottle of Italian salad dressing in a large bowl or foil tray.

2. Cut Passanante Platinum Reserve steak into 3 inch by 1 inch strips

3. Place 2 picked  jalapeños and one strip of white onion on top of the steak strip

4. Wrap the steak, jalapeños, and onion with a 1/2 piece of bacon and secure with 1 toothpick.

5. Place tailgate steak in the marinade.

6. Allow the tailgate steaks for marinade over night.

7. When it’s game time, toss the tailgate steaks onto the grill and enjoy!

Recipe: Spinach Stuffed Cajun Chicken

This next recipe courtesy of Cooking Creation just looked too good to not share with all of you. Try this spinach stuffed Cajun chicken to add a little excitement to your menu. Prep time is only about 15 minutes, then pop them in the oven and voilà.

Spinach Stuffed Cajun Chicken

What You Need:

  • 1 lb hormone-free boneless, skinless chicken breasts
  • 4 oz – 6 oz pepper jack cheese, shredded
  • 1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tbsp Italian style breadcrumbs
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Toothpicks

What To Do:

  1. Preheat oven to 350 degrees
  2. Flatten the chicken to 1/4-inch thickness
  3. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper
  4. Combine the Cajun seasoning and breadcrumbs together in a small bowl
  5. Spoon about 1/4 c of the spinach mixture onto each chicken breast
  6. Roll each chicken breast tightly and fasten the seams with several toothpicks
  7. Brush each chicken breast with the olive oil
  8. Sprinkle the Cajun seasoning mixture evenly over all
  9. Sprinkle any remaining spinach and cheese on top of chicken
  10. Place the chicken seam-side down onto a tin foil-lined baking sheet
  11. Bake for 35 to 40 minutes, or until the chicken is cooked
  12. Remove the toothpicks before serving
