For The Chops:

  • 2 8oz. Pork Chops (desired thickness)
  • Salt & Pepper
  • Olive Oil
  • ½ cup broth (chicken or vegetable)
  • 8 oz. Honey
  • 2 oz. Tabasco Sauce
  • 2 T. Minced garlic
  • 1 T. Red pepper flakes

1. Heat honey in a sauce pan on medium heat.
2. Add tabasco sauce, minced garlic and red pepper flakes.
3. Bring to a boil and let simmer for 10 minutes

1. Season pork chops with salt & pepper on each side
2. Grill each side for about 6 minutes (for medium) depending on grill temperature
3. Baste the pork chops with the glaze on each side
** Use extra glaze as dipping sauce (yum!)

For The Beans:

  • 4 leeks, washed, trimmed and finely sliced
  • A small bunch of fresh thyme leaves
  • 2 garlic cloves, peeled and finely chopped
  • Olive oil
  • 1 knob of butter
  • 1 wineglass of white wine
  • 1 lb. good-quality tinned or jarred butter beans, drained and rinsed
  • Small handful of fresh parsley leaves, finely chopped
  • 1 tablespoon crème fraîche
  • Good-quality peppery extra virgin olive oil

1. Sweat the leeks, thyme and garlic with a splash of olive oil and the butter in a heavy-bottomed saucepan on a low heat for 20 minutes until they are soft and sweet.
2. Turn up the heat and add the white wine.
3. Let the wine come to the boil, and add the beans and a splash of chicken or vegetable broth so the beans are almost covered.
4. Allow to simmer gently for 5 to 10 minutes until the beans are lovely and creamy.
5. Add the parsley, crème fraîche and a good glug of the extra virgin olive oil and taste for seasoning

Pork Chop Casserole

What You Need:

  • 6-8 pork chops
  • 4-6 peeled potatoes sliced
  • 1 can cream of mushroom soup
  • 6-8 slices of american cheese
  • 14 ounces of green beans (can used canned or fresh organic)
  • 1 small onion sliced

How to prepare Pork Chop Casserole:

  1. Brown pork chops in 1/4 cup oil in skillet
  2. Mix potatoes with 3/4 can of cream of mushroom soup
  3. Grease baking dish and layer: potatoes, onion, cheese, green beans, pork chops and the rest of the can of cream of mushroom soup
  4. Cover and bake at 350 degrees for 1.5 hours
  5. Uncover for the last 1/2 hour to brown

It’s that time of year again…grilling season!

Well, we’re past Easter which means a couple things for you and your family.  Ladies, your favorite white jeans are officially back in season and men — it’s prime time for grilling!

It’s probably no surprise to you that grilling your meats is always a healthy option, but if you’re working to get in swimsuit-shape, macaroni and cheese is probably not the most calorie conscious side dish for your chicken breast.

Try cutting up some of your favorite organic veggies and allowing them to absorb a low sodium marinade before wrapping them in a foil packet and popping them on the top rack of your grill. Squash, zucchini and asparagus do a great job of absorbing the signature smoky taste you only get from the grill and go well with any meat!

If you’re looking for something a bit more hearty, try thick slices of potato and onion seasoned and grilled with butter in a foil packet.

Since the grill is already hot you might as well try your luck at a delicious grilled dessert! Slice up some peaches, add a little honey and a dash of cinnamon before– you guessed it – putting them in a foil packet and grilling them into a guiltless peach cobbler without the crust!

Simple Chicken Divan To Die For!

Your friends at Passanante’s Home Food Service know you’re always looking for simple and delicious meals to prepare for your family. This fantastic Chicken Divan recipe is sure to be a crowd pleaser, and with the goodness of hormone-free chicken and organic broccoli it’s a meal you can be proud to serve!

Simple Chicken Divan

Ingredients:

  • 4-6 boiled hormone-free chicken breasts
  • 1 head organic broccoli crowns
  • 1 cup Hellman’s mayonnaise
  • 2 cans cream of chicken soup
  • Fresh squeezed juice of 1 lemon
  • 1 package of shredded cheese
  • 1 small jar of pimentos

How To Make It:

  1. Lightly steam organic broccoli until bright green and line the bottom of the casserole dish with broccoli crowns.
  2. Tear boiled hormone-free chicken into bite-sized pieces and place over broccoli
  3. Mix other ingredients together in a bowl (mayo, cream of chicken soup, lemon juice)
  4. Spread mixture over broccoli and chicken
  5. Cover with shredded cheese and pimentos for color (pimentos are optional)
  6. Cover with foil and bake at 400 degrees until hot and bubbly
  7. Serve with yummy warm rolls
